Cheese Triangles
(Greek: Tiropetes)

12 Tbsp. butter (3/4 c.)
3 Tbsp. flour 
11/2 c. milk 
3/4 lb. Feta cheese, crumbled

Pepper
2 eggs plus 1 egg yolk
1/2 lb. phyllo pastry sheets

In a saucepan, melt half the butter. Add flour and stir until mixture becomes light brown. Remove from heat and slowly stir in hot milk. Cook, stirring constantly, until sauce is smooth and thickened. Add crumbled cheese and pepper and stir. Add eggs and egg yolk, 1 at a time, beating well after each addition. Melt remaining butter.

Cut sheets of phyllo pastry in 3 inch strips and spread with butter. Put 1 tea­spoonful of cheese filling on end of strip, then fold into triangles as instructed in recipe for Cheese Puffs. After all the cheese triangles are folded and ready, place on a baking pan and spread more butter on the top of each 1. Bake in a 400' oven for 10 to 15 minutes until golden. Serve hot. Yield: 60 pieces.
